Who doesn’t like tacos? You can whip out these taco’s within 25 minutes, without compromising on the taste. We are going to cheat a bit by using bold flavors like Chipotle in adobo sauce, smoked paprika, oregano and cumin.
And let's not forget the star of the show: spicy sauce. We highly recommend our Pineapple punch spicy sauce to bring some sweet and spicy flavor to the party, but use whatever hot sauce you love. Let us know what you think!
Step 1
In a bowl, combine the smoked paprika, cumin, dried oregano, 1 tbsp of vegetable oil, and chipotle in adobo sauce. Mix well.
Step2
Season the chicken thighs with the spice mixture, making sure they are well coated and let marinade while you prepare the other ingredients.
Step 3
Clean your avocado’s and mash them with the juice of half a lime and some salt and pepper. Keep this in the fridge until ready to serve.
Step 4
Heat a skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until cooked through.
Step 5
Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes.
Step 6
Warm the corn tacos in a dry skillet over medium heat, flipping them occasionally until they are warm and slightly toasted.
Step 7
To assemble the tacos, place some mashed avocado and diced chicken on each taco. Add some pickled red onion, and cilantro. Top with a drizzle of Pineapple punch spicy sauce (or hot sauce of your liking).
Step 8
Garnish with a slice of chili pepper and a squeeze of lime juice. Serve and enjoy!
