Instructions

This is a Herbacious and zingy feta-artichoke dip recipe for your next gathering with friends and family. Everybody will love this spread and the bowl will definitely be empty by the end of the evening. The wow factor is mainly created by the combination of the salty feta cheese, the huge amount of fresh herbs and the boldness of the anchovy and kalamata olives. If you want to make the dip fully vegetarian feel free to skip the anchovy paste, but I think it adds a great additional layer of taste.

Artichoke-feta dip ingredients

Step 1
Add the feta, garlic, anchovy, fresh herbs, lemon juice, lemon zest, and olive oil to the food processor. Blend this until you have a very smooth bright green paste. 

Step 2
Now we will add the ingredients that we want a bit chunkier. Start by rough chopping the artichoke hearts and add them to the food processor. Also, add the capers and the pitted kalamata olives. pulse until you have a texture that you are happy with.

Chef’s tip
If you happen to have some leftover Artichoke dip, it makes a perfect base for a pasta salad. Just combine the dip with a bit of water/oil and add to cooked pasta and all the veggies/protein of your choice. Enjoy!
