This dish has become a staple of Swedish fast food culture and is commonly found at food trucks, kiosks, and convenience stores throughout the country. Think about it as a kebab after drinking, but then the Swedish version. It's known for its satisfying combination of flavors and textures, making it a popular choice for a quick and tasty meal.
The name "Tunnbrödsrulle" translates to "thin bread roll" in English, referring to the flatbread used as the outer layer of the dish. It's often served rolled up, making it convenient for eating on the go. While authentic Swedish flatbreads may be hard to find, a decent quality Middle Eastern flatbread can provide a similar experience.
The toppings can vary widely, but the base always consists of mashed potatoes and a type of meat, usually good-quality hotdogs. This is followed by sauces, veggies, and other condiments. One popular version is topped with a shrimp-dill salad, lettuce, and ketchup, which we'll be making today.
Typically, the wraps are rolled up in foil or parchment paper, but we also like to fold ours, as it's a bit less messy to eat. To do this, simply slice your bread towards the middle, add all the toppings to one quarter of your wrapper, and then fold the rest around the filling, creating a pocket for your toppings. Step 1
Peel and dice your potatoes into evenly sized cubes. Place them in a pan and submerge them in cold water with a pinch of salt. Bring the water to a boil and let the potatoes simmer for about 20 minutes or until they are fork-tender. While the potatoes are cooking, finely chop your dill and mix it with the shrimp, sour cream, salt, and pepper. Set this mixture aside for now.

While the potatoes are boiling, it's time to fry your sausages. Preheat a skillet over medium-high heat. Cook the sausages for about 3-4 minutes on each side or until they are fully cooked.

Now it's time to assemble your wrap! Place your wrap or flatbread on a plate. Spread a few tablespoons of the potato puree onto the wrap. Next, add some lettuce, followed by the cooked sausages, and then half of the shrimp sauce mixture. Finish by adding a drizzle of ketchup. Roll up your Tunnbrøderulle and enjoy!
