Who doesn't love a fried chicken burger?! At least I could eat it every day, but sometimes you want to try and avoid eating too much meat. At the moment my favorite fried chicken burger in the Amsterdam area is without doubt at KID restaurant. Recently we tried the Sichuan spiced fried oyster mushroom burger at their place and it was incredible! They inspired me to try and re-create their burger and today I will share this with you.
I understand that this might be a bit overwhelming with all the different spices, but even if you just try out the method for the oyster-mushroom-patty it will be a guaranteed success. You can use your favorite dry rub and sauces/condiments to create a vegetarian alternative for the beloved fried chicken burger. Let us know what you think!
Step 1
This is a typical dish where it is nice to be well prepared, so that is where we start! First, we will make the seasoning for the fried mushrooms we use after frying. Add to a small bowl: 2 tsp onion powder, 1 tsp garlic powder, 1 tsp five spice powder, 1 tsp ground Sichuan peppercorns, 1 teaspoon Kashmiri chili powder, salt & pepper to taste, and a pinch of MSG (optional).
Step 2
Now add to a large bowl; 2 tsp onion powder, 2 tsp garlic powder, 1 tsp Kashmiri chili powder, all-purpose flour, and cornstarch. Then (in a separate bowl) mix 75 grams of mayonnaise with a tbsp of Siracha and a squeeze of lime. set both items aside for later.
Step 3
Now it is time to marinate the Oyster mushrooms in a mixture of buttermilk, vinegar, and a pinch of salt. Let this sit for at least 30 minutes.
Step 4
Mix your shredded red cabbage with 25 grams of mayonnaise, the sesame oil, a squeeze of lime, and some pepper & salt to taste. Now we are ready to fry some mushrooms.
Step 5
Preheat your vegetable oil to 180 degrees Celcius. transfer your marinated mushrooms to the dry flour mixture and try to push in some of the dry ingredients onto the mushrooms to create a nice crust. lay on a wire rack and let sit for about 10 minutes or until your oil is up to temperature.
Step 6
Fry your “patty’s” for about 6 minutes or until golden brown and crispy. If you are shallow frying, this will take a bit longer. When you remove it from the fryer, immediately dust it with your seasoning mixture to make it stick.
Step 7
Toast your buns on the cut side and now we assemble. I like to put sriracha mayo on both sides and build my burger with cabbage slaw, the patty, some pickles, and top it off with cilantro. Serve with fries and the beverage of your choice, enjoy!
