Instructions

This salad is a delicious blend of sweet and spicy flavors, with fresh ingredients tossed together in a zesty Lime and Pineapple Punch dressing. Topped with a sprinkle of fresh mint and sliced red pepper for a pop of color, this salad is as beautiful as it is delicious.

Ingredients

Step 1
Cut the mango, cucumber and spring onion in bite-sized chunks. I like to dice the mango and cucumber, and slice the spring onion. Put it into the same bowl.

Step 2
Combine the diced vegetables with the lime juice, the olive oil and the Pineapple Punch.

Step 3
Add the chopped fresh mint, and chopped peanuts. Garnish with sliced red pepper (if desired).
