Step 1
Cook the israeli couscous according to the packaging. Set aside to cool down.
Step 2
Defrost the peas.
Step 3
Slice or cut the courgette. Drizzle the courgette with olive oil and bake it in a baking pan or grill pan. Set aside to cool down.

Toast the pine nuts in a small baking pan and set aside to cool down.
Step 5
Chop the red onion in very small pieces. Dice the avocado and cucumber in bite-size chunks. Cut the parsley, mint and feta.
Step 6
Put the courgette, isreali couscous, peas, cucumber, red onion, parsley, mint, feta cheese, rocket salad and avocado in a big and pretty bowl. Drizzle with olive oil, juice of 1 lemon, pepper and salt. Mix the salad!
Step 7
Garnish with the pomegranate seeds and pine nuts.
