Instructions

Turn those overripe bananas into a mouth-watering banana bread with this easy and (fairly) healthy banana bread with oatmeal recipe! It's moist, sweet, and oh-so-delicious. It's the perfect treat for breakfast, snack time, or as a sweet after-dinner dessert. And the best part? You only need a few simple ingredients and it's a breeze to make.

Trust me, once you bake a loaf of this banana bread, it'll quickly become a family favorite and you'll be whipping up batches on the regular. So, let's get our bake on!

Step 1
Preheat your oven to 160°C (320°F) and grease your loaf pan with a little drop of neutral oil. I also like to line the bottom of the pan with a piece of baking paper, but this is optional.

Mash the bananas with a fork in a small bowl.

Mix the oil, sugar, and eggs in a large bowl. Whisk this until everything is homogeneous and incorporated. Then mix in the mashed bananas, vanilla extract, and greek yogurt.

Step 4
Now add the dry ingredients: flour, oatmeal, baking powder, baking soda, and spicemix. Only wait with the optional ingredients like nuts, coconut, and cranberries. Stir with a wooden spoon or spatula until you have a smooth batter.

Now it's time to stir in your optional ingredients and pour the batter in your loaf pan.

Sprinkle some oatmeal over the top for the looks 😎

Bake for about 60 minutes and until a toothpick inserted into the center of the loaf comes out clean. Remove the banana bread from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
