Indonesian Corn Fritters, or "Bakwan Jagung," are a cherished dish that I fondly remember enjoying with my family with Indonesian roots. These crispy, golden fritters, bursting with sweet corn and spices, were sometimes a staple at family gatherings and special occasions. Now, I'm excited to share this family favorite with you, so you can bring this Indonesian snack to your own table 🌽
Step 1
Heat a pan over medium heat and drizzle in some neutral oil. Add the corn and cook for 3 minutes, stirring occasionally.

Add the cumin, coriander, turmeric, garlic, 1 sliced spring onion (reserve the other for garnish), a pinch of sugar, and sambal. Stir well to combine and cook for another 3 minutes. Add the finely chopped lime leaves and celery leaves, stirring to incorporate.

Stir in the flour and cook for 2 minutes, ensuring the flour is well mixed with the other ingredients. Add the water and cornstarch, stirring continuously until the batter thickens.

Remove the pan from heat and let the mixture cool slightly. Then, add the egg to the batter and stir well to combine until smooth.

Heat oil in a separate frying pan over medium heat. Ensure there is enough oil to cover the bottom of the pan. For each fritter, scoop a heaping tablespoon of batter into the pan, cooking a few fritters at a time without overcrowding.

Cook the fritters until the bottoms are golden brown and crispy, about 2-3 minutes. Flip them over and cook the other side until golden brown as well. Remove the fritters from the pan and let them drain on paper towels. Repeat until all the batter is used up.

Garnish the fritters with the reserved sliced spring onion. Serve with chili sauce or your favorite dipping sauce.
