Whether you are looking for the perfect hangover sandwich, a hearty lunch, or a simple dinner this is a must-try sandwich for all occasions. Everybody loves teriyaki chicken and it has been done by all kinds of food chains; Usually poor execution and expensive. Today we will show you a version, that is quick, high in flavor, and inexpensive.
A combination of perfectly tender and well-coated chicken and some crispy veggies is the success factor of this recipe. You can also vary with ingredients; for example, leave out the wakame seaweed salad or substitute the wasabi mayonnaise with another sauce of your liking (or based on what you have in your pantry). It is also nice to make a big batch of chicken in teriyaki sauce to eat with rice or store in your fridge/freezer for another meal. Let us know what you think and enjoy cooking!
Step 1
Start with slicing your chicken thigh in strips and put this in a small bowl together with 1 tbsp of soy sauce and the grated garlic. let this marinade for about ten minutes. This gives you time to slice your cucumber, lettuce, spring onions and prepare the rest of the sauce.

For the sauce, combine the rest of the soy sauce, the honey, water (or dashi), siracha, and the grated ginger in a small saucepan and let this simmer for about 5 minutes.
Step 3
Now we fry the chicken in 1 tbsp neutral cooking oil until almost done (approximately 6 minutes on medium-high heat, whilst stirring occasionally). then turn the heat to low and add the teriyaki sauce, let this simmer for two more minutes. Now we combine the cornstarch with two teaspoons of water in a small bowl and add this to the pan while you are stirring. Let this simmer for one more minute and then turn off the heat. Your sauce should be nice and thick and coat the chicken all around.
Step 4
It is time to build our sandwiches! I like to heat the baguettes quickly in a hot oven for two minutes, to make them crispy on the outside. Slice your bread and start with a tablespoon of wasabi mayonnaise. Then we add the lettuce, seaweed, and the chicken. Garnish with the cucumber and spring onions and you are ready to eat. Enjoy!
