The hardest part is separating all the grapefruit segments, but is definitely worth it. This Salad recipe has a mediterranean feel to it and complements a pasta dish perfectly. Step 1
This salads starts by prepping all the ingredients; start with peeling the grapefruits with a kitchen knife until you see no more white skin. Then cut in between the membranes to create clean segments (as you can see in the picture of the final result). Peel the outer layer of the fennel and keep the herby parts separate for garnish. Then by using a mandolin or kitchen knife cut the Fennel as thin as possible. Clean and dice your avocado.
Step 2
Now it is time to make the dressing; In a serving bowl mix the oil, vinegar, mustard, salt and pepper with a whisk until homogenous. Now toss your fennel and baby spinach in the dressing and garnish with the grapefruit segments, avocado slices, pecan nuts and the herby parts of the fennel. Enjoy your easy but refreshing salad!
