Step 1
Bring a large amount of water to a boil in a large pot and blanch your spinach for a maximum of 30 seconds. then place your spinach in a colander and rinse with cold water to stop the cooking process and keep the spinach nice and green. now squeeze out all of the excess water and place in a bowl.
Step 2
In a small bowl, mix together the sesame oil, garlic, and soy sauce. Pour the dressing over the spinach and toss to coat. Top the salad with the sliced scallions and sesame seeds. If using, garnish the salad with thin slices of red chili or a sprinkle of gochugaru chili flakes.
